Isolation and properties of immune lactoglobulins from bovine whey.
نویسنده
چکیده
It has already been reported that the principal protein of bovine colostrum is immune lactoglobulin, and a procedure has been described for the isolation of this protein (1). While the immune properties of colostrum have been generally recognized, it is widely believed that this is a specific quality of colostrum, and that immune properties are absent from the later milk or are present only in traces. In this communication, it will be demonstrated that the immune proteins are present in normal milk as shown by an electrophoretic analysis of the whey and by the isolation of these proteins in electrophoretically homogeneous state. The immune activity of milk like that of colostrum is associated with two different immune lactoglobulins which differ in electrophoretic mobility, solubility, and analytical composition (l-3). For convenience, they may be described as euglobulin and pseudoglobulin. Some of the properties of these proteins will be discussed.

Identification of adulteration in water buffalo mozzarella and in ewe cheese by using whey proteins as biomarkers and matrix-assisted laser desorption/ionization mass spectrometry.
A rapid and accurate method to identify bovine and ewe milk adulteration of fresh water buffalo mozzarella cheese by using matrix-assisted laser desorption/ionization time-of-flight mass spectrometry (MALDI-TOFMS) is described. The differentiation among mozzarella made from water buffalo milk and from mixtures of less expensive bovine and, more recently, ewe milk with water buffalo milk is achi...

Proteins of the same kind in human milk and cow's milk have different properties. Mellander (1947) reports differences in phosphorus content and the amount of carbohydrates of casein and that the casein of cow's milk is more easily digested by proteolytic enzymes in vitro than that of human milk. Kiyosawa, Ryoki & Maeno (1961) observed a marked difference in the solubility of casein and the tur...
متن کاملFurther Studies on the Amino Acid Composition of Immune Proteins
Although the protein nature of antibodies is now firmly established, there is little available information concerning their amino acid composition. Studies recently reported from this laboratory have provided methods of isolation which have made available sufficient amounts of immune proteins for analytical study (l-3). These proteins are for the most part electrophoretically homogeneous, but a...

In this study, twenty-five whey samples collected from dairy industries in the city of Isfahan. The sampleswere cultured on malt extract broth (MEB) and yeast extract glucose chloramphenicol agar (YGCA) media.Eleven yeast strains (designated M1 to M11) were isolated from the culture. The strains were identified bytheir morphological and physiological properties. Betagalactosid...

The balance between free radicals and antioxidants is an important factor for maintaining health and slowing disease progression. The use of antioxidants, particularly natural antioxidants, has become an important strategy for dealing with this cause of widespread diseases. Natural antioxidants have been used as therapeutic tools against many diseases because they are safe, effective, and inexp...
